It is the most popular drink after Pisco Sour, however, it is the most ancient. This cocktail owes its name to the fish soup called chilcano, which is attributed with the same reconstructing properties of this drink.
If we compare in the ancient with the Pisco sour, some texts have been found talking about a “chilcano” made of Pisco in the beginning of the XXth century( “Como era una jarana en el Cercado allá por el año 1900, Eudocio Carrera Vergara), before the Pisco sour apparition.

  • 1 ounce of Pisco La Torre
  • 6 ice cubes
  • ½ ounce of lemon juice
  • Ginger ale as you wish


Put the ice in a glass, add the Pisco La Torre, add the lemon juice and the ginger ale. Stir a little bit, add 2 lemon slices and add 3 drops of angostura bitter. ¡Enjoy it!
